Potassium sorbate, a white, odorless crystalline powder, is the potassium salt contained in sorbic acid obtained through a synthesis process. Sorbic acid is found in nature mainly in rowan berries. It has an antimicrobial function against yeasts and fungi and is therefore used in cosmetics as a preservative, in fact it is considered harmless to the skin as it is metabolized in the human body through water and carbon dioxide. It does not tolerate pH higher than (approximately) 5 and to obtain optimal conservation of the product it must be combined with one or more preservatives, usually with sodium benzoate.
