Sodium anisate is obtained from star anise (Illicium verum) by steam distillation. Anethole is separated from the essential oil which, after oxidation and neutralization with soda, is transformed into sodium anisate. It appears as a liquid easily soluble in alcohol. It is used as a broad-spectrum preservative, combined with levulinate, due to its activity of counteracting the growth of aerobic and anaerobic microorganisms.
