Xylitol is a compound similar to sucrose, obtained by extraction mainly from birch, but also raspberry, strawberry, plum and wheat. It is found naturally in the fibers of many fruits and vegetables. It is used as a food additive as a sweetener especially in chewing gum and candies. Compared to the common sucrose it has the same sweetening power, but a reduced calorie content. Xylitol is also used in cosmetic products for the oral cavity to prevent the formation of caries and reduce the formation of plaque. The latter action is due to its activity against the bacteria that favor the formation of the plaque itself, including Streptococcus Mutans. It also seems to be active in promoting the remineralization of small lesions.
