Cinnamic acid is an unsaturated carboxylic acid of white color and needle-like crystalline appearance. It is characterized by a light floral smell, reminiscent of honey and flowers.

Cinnamic acid is present in cinnamon essential oil and in many balms, as well as in shea butter.

The name cinnamic derives from Cinnamomum zeylanicum (evergreen tree) from which cinnamon is obtained. The origin of the name could also derive from the English term cinnamon, i.e. cinnamon.

Cinnamic acid is used in the production of flavourings, dyes and pharmaceuticals, but its main use is for the production of its methyl, ethyl and benzyl esters which are important components of perfumes.
